I'm starting to like fish.

So far my favorites are Red Snapper and Flounder for shit I could eat errday. I had some Sea Bass that was fucking noms too, but that shit's Fillet Mignon price around here as far as I've seen.

What do you like? Got any really good recipes?

Also, fuck yo catfish hillbillies!

I usually grill (George Foreman) or bake. Usually some combo of garlic and citrus.

Grilled tilapia on fresh salsa (chop tomatoes, lemon or lime, cilantro, No Salt, pepper)

I love Halibut! It's one of my favorites.

Also like snapper, tilapia, sea bass, orange roughy, walleye, trout. I enjoy most whitefish.

I like almost every fish I've tried. I had some funky tasting shark, but I think it was due to the cooking process. Ahi tuna is my fucking shit. I could eat pounds of it. And probably die, but I would die an amazing sushi death.

Add whatever sides you like:

Marinade:
1 small orange
2 limes
1 medium lemon
1 clove of garlic, minced finely (use fresh, not the jar shit)
2 tablespoons cracked black pepper
1 tablespoon coarse sea salt

Stir all ingredients together and put in a freezer bag with a couple 1 inch thick filets. Put in the fridge and let it marinate for at least 20 minutes, but no more than an hour.

Get your grill hot while the fish is marinating. Once your grill is hot, use a rag to coat the grates with some canola oil to keep the fish from sticking. Place the fish on the grill, and cook for 3 minutes per side. Be careful when turning to keep the fish from breaking apart. If you want the flavor of the marinade to come out a bit more, use a brush to brush some of the marinade on the fish while it is cooking.

You can use the fish as an entree or for fish tacos with some cilantro and whatnot.

When I lived in TX, wifey and I used to take our (then tiny) travel travel down Matagorda Island and would camp. 10-12 miles down past the "4wd access only" portion of the beach. Was awesome. We could go days without seeing another filthy human.

Anyway, one time a buddy and his girlfriend came with us. Except she was some high maintenance bitch who thought the DoubleTree hotel was "roughing it".

Wifey and I packed the fridge with food to last us several days and beer to last a month. Buddy had different idea... Besides a tooth brush, all he brought was his fishing pole. He said, "If I don't catch it, then we're not eating." Almost with the same conviction as Lieutenant Dan during the storm....

Cool story part??? We ate like fucking kings.

For what it's worth, the marinade I posted for the Mahi Mahi will work well with any firm flesh fish, Swordfish, Tuna, etc. I forgot to mention that.

You give me flaky fish, like tilapia or cod, it's beer battered and fried. I don't give out the recipe for it very often :)
