Ingredients
4 boneless, skinless chicken breast halves, about 6 oz. each
1/4 cup salt, preferably without additives
1 tablespoon molasses OR 1/4 cup brown sugar (optional)
2 tablespoons olive or canola oil
2 teaspoons lemon juice
1 tablespoon finely chopped fresh tarragon, oregano or other herb
salt and pepperDirections
To brine the chicken, put 1 quart water and 1/4 cup salt (with molasses or brown sugar, if using) in a bowl or zip-top bag. Stir to dissolve and add chicken pieces. Refrigerate for 1-2 hours.
When ready to cook, preheat grill to high. Make herb mixture: whisk together olive oil, lemon juice, and chopped herbs. Remove chicken from brine and pat dry. Salt and pepper both sides.
Oil grill grates and brush chicken with herb mixture. Grill first side about 5 minutes. Brush top (ungrilled) side with herb mixture, turn the chicken and brush top (grilled) side with herb mixture. Cook until meat is opaque and no pink shows when you cut into the thickest part, another 4-6 minutes, depending on thickness. Brush both sides again and turn, about 30 seconds per side.
Serve immediately.

1 - 10 oz. can condensed cream of chicken soup
1/2 cup light mayonnaise
1 tsp. curry powder
1 tsp. lemon juice
1/2 - 1 cup grated cheddar cheese

Instructions:
Chop up chicken into bite-sized cubes and sprinkle with pepper. Heat oil in a skillet and cook chicken pieces until opaque (do not overcook). Drain. Steam broccoli until cooked but still crunchy. Arrange broccoli at the bottom of a greased casserole dish. Place chicken on top. Mix together soup, mayonnaise, curry and lemon juice and pour over chicken. Sprinkle with cheddar cheese and bake, uncovered, at 350F for 30-35 minutes.

Serve with noodles or rice, can also sub asparagus for broccoli.

1/3 cup olive oil
1/3 cup tequila
Juice of 6 limes
1 tablespoon salt
2 tablespoons old bay seasoning
1 teaspoon pepper (more or less to taste)

Mix thoroughly, marinade chicken, shrimp, or beef for as long as desired (if marinating shrimp then limit it to 30 minutes or the citrus will start to cook them and make them chewy after grilling), sear over high heat, finish over medium heat, basting/brushing the marinade on the meat often, ???????????, profit.

Either are fantastic on chicken both baked or grilled. Especially for those looking to cut out salt.

For serious though. On chicken breasts, I don't use a lot of separate "recipes"...

I imagine you're asking because it's an easy, lean source of protein when working out. What I usually do, is a simple brine as in the OP, or just brush with olive oil and fresh cracked pepper and salt. Toss it on the grill, paying attention not to overcook, I use a meat thermometer on occasion. Always take off 5-10 degrees below desired temperature. If you plan on reheating later, you can even leave it very slightly under. Let them rest, and refrigerate them in a sealed bag (keeps moisture in, prevents drying out).

I'll prepare a half dozen for myself, and use throughout the week. The nice thing about a not going with a set recipe (flaovr), is you can make completely different meals out of them later.

My go-to simple additions to my grilled chicken breasts:
- Balsamic Vinegar, garlic, herbs, parmesan, with wheat pasta.
- Teriyaki, sriracha, over brown rice.
- Taco sauce, hot sauce, low fat shredded cheese, over brown rice.
- Tomato Sauce, Red pepper, parmesan, with wheat pasta.
- Barbecue, low fat cheddar, with brown rice.
- Your favorite wing sauce, with brown rice.

Add a vegetable if you want, I rotate between green beans, peas, asparagus, and broccoli. Or start out with a salad, and you have a bunch of meals to go to throughout the week.

Make it about once a month. Only thing is the cook time. Emeril must use a convection oven when he states 12 minutes. I set mine for 25-30 minutes and they're perfect.

Yes. Comes out perfect. The breast is thick (not cut up) and there is a lot of liquid in there with the wine... And even from the tomatoes and spinach even though they are drained.

If you read the comments on foodnetwork.com, a lot of people say the same thing.

Honestly no idea. My mom was making the exact same thing ever since I was a kid. Called Classy Chicken. She never put in the veggies though.
