View Full Version : Cajun barramundi with yogurt sauce.

Good stuff I made last night.

Ingredients:
Australian Farm raised Barramundi

Cajun Mix
1 tablespoon paprika
1 teaspoon oregano
1 teaspoon black pepper
1 teaspoon mustard powder
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper

Yogurt Sauce
1 cup low fat plain yoghurt
2 tablespoons lime or lemon juice
1 small Lebanese cucumber, grated
2 tablespoons chopped fresh dill



Method:
Combine sauce ingredients in a small bowl and refrigerate. Brush fish with olive oil. Combine Cajun mix ingredients and rub into all surfaces of fish. Heat a grill pan or non-stick frypan to very high and brush or spray with oil. When it starts to smoke, add fish and cook 2-3 minutes on each side, until spices start to blacken. Serve immediately on cooked rice with the yogurt sauce.

I should have gotten teh pics. I sux. It is a cool combo though. The fish itself has a really nice spicy bite, then the suace has a nice sour compliment to it. good combo.

I know that I read wiki it said cod was just wondering if it would be ok with the shit I buy at the store.

Is it a light fish? I usually only like really light fish, or white meat fish. Some salmon. But cod or white fish when prepared properly is great. Especially when fried and made into fish tacos.

I usually take some cod/haddock and broil it in the oven with some lemon pepper, planko crumbs and juice from a lemon. It is FTW

Therre are 2 type of barramundi. this is the freshwater varriety not the cod type. However, I see no reason why this couldn't be used on any mild fish like grouper, or Mahi Mahi. You should be able to find frozen barramundi in the store. I got mine at walmart. They are farm raised and individually sealed/frozen. It's a good fish and cheaper than a Mahi. If you prefer fresh though then by all mean use a fresh mild white fish of your liking.

I thought it was good. I ate it before posting this, hence why no pics exist. The fish without the sauce is very spicy blackened style, then the sauce give a sour and herbal compliment to the spicy. Very dimensional flavor.
